Delicious Food For Your Cold Night

Its cold, and you're hungry. If you're looking for an easy, healthy and inexpensive recipe for you and your family this is perfect for you!

Serves 4, Total Time 55 mins 

Ingredients:

  • 2 lbs butternut squash -peeled, and cut 1 1/2 in pieces

  • 1/4 cup fresh sage leaves

  • 2 tbsp plus 1 tsp olive oil

  • salt and pepper

  • 4 bone-in pork chops- 1 inch thick

  • 2 garlic cloves

  • 1 lg bunch kale- roughly chopped

Directions:

  1. Heat oven to 400 degrees. 

  2. Toss squash, sage, 1 tbsp olive oil, salt and pepper on large baking sheet-cook for 30-35 mins

  3. Heat 1 tsp of oil in lg skillet at high heat. Season pork with salt and pepper. Cook until browned, 3-5 mins per side.

  4. Transfer pork to baking sheet with squash, and cook for 6-8 mins more.

  5. Return the skillet to medium heat and add 1 tbsp of oil. Add garlic, cook until fragrant.

  6. Add the kale, water, and salt. Cook, tossing until kale is tender, 5- 7 mins.

  7. Serve with pork and squash, and ENJOY!
